    Soak up all of NYC’s summer energy—and it’s been a good one—at PUBLIC on the Lower East Side, which reopened this past June and offers up a cutting-edge culinary team in Peru’s Chef Diego Muñoz and NYC’s Chef John Fraser. There are numerous dining and drinking spots to try, including Popular and Cantina & Pisco Bar. “Our pisco sours and chilcanos are great to start with outdoors at Bowery Garden or before a meal at Cantina and Popular, which is a very cozy, lushly green environment that attracts all the energy that summer brings us,” says Muñoz. “The Latin flavors, catchy salsa tunes, and our live band on weekend nights lifts guests from their chairs to show off their best moves.” Two can’t miss options: “Our Ceviche Bar, which exemplifies freshness and produces at its peak, enables us to ‘cevichify’ anything that comes to our minds,” says Muñoz. “A bit of citrus, a bit of chili, and a little salt create the perfect balance.” And, of course, dessert: “For dessert, our guests are transported culinarily to the Peruvian desert and the low hills of the Cordillera with our indigenous produce—lucuma, chirimoya, and maracuya.     In Mexico and the Caribbean

    Eden Rock – St Barths, St Barthélemy

    You can head to the recently renovated Rémy Bar at Eden Rock on the gorgeous island of St Barths any night of the week at 6 pm: That’s when their Rock Hour kicks off, featuring music by the hotel’s resident DJ Tito, along with cocktails and food. But you should definitely make it a point to get there on Sundays for their signature Fire Show: “Here in St Barths, every day is a celebration,” says Fabrice Moizan, General Manager of Eden Rock – St Barths. “Following the success of our daily ‘RockHour’ at Rémy Bar, we were inspired by our guests’ desire to extend the festivities and delight them with an unexpected surprise. Each Sunday, our talented mixologists offer a front-row viewing of their evening ‘Fire Show’ performance, setting a row of our signature Banana Bomb shots ablaze throughout the entire length of the bar.     Las Ventanas Al Paraíso, Los Cabos, Mexico  

    This ultra-lux Rosewood resort in Mexico has all the makings of a never-ending summer: infinity pools, lazy river, beach cabanas with private plunge pools, a Director of Romance (Seriously, that last one!) And that includes its newest venue: La Botica, a 1920s inspired speakeasy piano bar with apothecary vibes that opened last year. Enter through a secret door near the spa, sip one of their creative cocktails— a Bee’s Wax Old Fashioned, maybe?—and don’t miss music by the hotel’s first-ever artist in residence, Rosalía de Cuba. The talented singer, whose music mixes Cuban, Caribbean, Latin, and international, performs songs in five (!) different languages.     Six Senses Ibiza, Ibiza, Spain

    If you’re past the foam parties of your youth but are still looking for a great time, then Six Senses Ibiza, which just opened in July on Xarraca Bay on the northern coast of the island, should be on your list. With its secret recording studio and live entertainment, music really takes center stage here, with offerings put together by music industry exec and Columbia Records alum, Shivas Howard-Brown. At sunset—particularly on Wednesdays and Saturdays this season—you’ll find pop-up performances, local bands, and DJs (like Jaime Fiorito, Rakim Under, and Sadeedo, to name a few), plus more in the works for 2022.
